Queen’s tranquility -
安静的女王
Mangosteen & Vanilla mousse

Renowned as the “Queen of Fruits”, Mangosteens are known for their exotic delicate sweet & sour flavour. For its title, legend has it that Queen Victoria enjoyed these once rare fruits so much that she would grant a knighthood to anyone who would bequeath her with a ripe mangosteen.

In Traditional Chinese Medicine, vanilla can regulate qi & relieve restlessness, bringing a state of peace, calm & tranquillity both physically & mentally.
The Empress dines with Poets -
太后与诗人同宴
Jasmine flower tea & Yangmei bayberry ganache

Considered one of the holy flowers of Buddhism, floral, sweet & subtle Jasmine tea was used by Chinese Buddhist monks as a meditative aid, and it is known for encouraging a mood of relaxation, focus & concentration.
Historically, it is said that China’s most powerful woman, Empress Dowager Cixi had a special liking for jasmine tea. During her reign jasmine became China’s national flower & she decreed that no-one else in the kingdom could wear jasmine flowers as decoration. Fuzhou jasmine tea was reserved exclusively for the royal family and jasmine tea was given as gifts to foreign envoys.

Since ancient times, Yangmei, this bright juicy superfruit’s ruby red allure & sweet, tangy flavour, is mentioned throughout Chinese literature, making several appearances in poems by China’s most famous poet 李白(Li bai). Li bai writing “The jade plate of bayberry is set for the monarch”, while 江淹 (Jiang Yan) the first person to put the Yangmei into poetry wrote in his Ode to Yangmei “It is as precious as lychees & more fragrant than magnolias”.
Hainan tropical unity -
海南热带大团结
Hainan coconut & Hainan ‘perfume’ lime with toasted coconut crunch

Using coconut from China’s southern tropical island province of Hainan, the coconut represents togetherness. The Chinese word for coconut 椰子(yezi) sounds like the word for grandfather-son,  爷ye (grandfather) 子zi (son). It signifies a strong stable family bond & a big family.

Combining with the soft rich flavor of the Hainan coconut, I pair this with the Hainan ‘perfume’ lime (海南香水青柠檬). Lime (青柠檬 qing ningmeng), is an auspicious fruit as its name is pronounced the same as the 庆 (qing) from celebration. With its fresh bright colour and sweet & sour balance it is regarded as a symbol of freshness and often used to describe happy emotions as well as love.
